Sounds good.
Just wondering how it was going to be done.
At the referees discretion is as valid a method as any.

Are normal food supplies purchased for the previous expedition assumed to have spoiled by this point?
How long do rations last (as opposed to the unpreserved food)?

Let's say regular food can last up to a week (outside the dungeon) with appropriate care.
Rations can last, say, up to month (even in a dungeon).

I'm assuming that 1 gp = 10 sp.
We each got 4 gp, 10 sp as treasure from the last adventure run. That equals 50 xp, correct?
Also assuming that the 300 sp we got from ransoming Thick-Neck is split into 15 shares, which turns into another 40 sp and 40 xp for each PC.

Remember that 1 gp = 6 sp = 36 cp!

In Hinterlands 1 gp = 6 sp = 6 XP.

4 gp is worth 24 sp and also 24 XP. So, 4 gp + 10 sp is worth 34 sp and also 34 XP.

If you wish to divide 300 sp into 15 equal shares, then 300/15 = 20, so that makes 20 sp and 20 XP per share.

Did we decide to ransom Thick-neck?
Dopey has no objections, but will not advocate such an action either.
If we do so are we splitting the shares 2 shares per PC, 1 share per NPC?

That is for the players to decide (and post in game), but I do believe that is the intended course.

* You must spend a minimum of 7 sp on cost of living expenses,

Am I belatedly correct in realizing that 7 sp must be spent on living expenses regardless of whether a figure works or not? Thus for a working figure during this turn, gross pay is 12 sp (six days, assuming one day purchasing supplies), and net is 5 sp.
